So she took a break from her DIY accents one fine day, though the fridge gave her a grungy nudge, there she was.. still waiting for the perfect mood to fin'lly make her own recipe using the Organic Longan Honey graciously sent by MEKHALA.

When her throat goes berserk due to sinus/colds, she usually takes a spoonful of honey every morning,(no diluting of any kind) followed by a cup of warm water. Saved up her tummy from antibiotics and takes away the 'heaty' feeling outta thy body!

One of her ultimate favorites is the Phantom of the Opera. She was in cloud 9 when she was able to catch the play last 2007, front row some more, whew! This was 5 years ago, after watching the Phantom of the Opera Broadway play in Singapore, her life was then complete, front row some more and she almost swallowed her tongue. From the admirable costumes, to the amazing sets, to the musical score... there is that pulling power that turned her rather speechless.

This song was played on her friend's wedding reception, so BAM! The only word that came to her mind-- canapés.
Some consider them a must during wedding recepts as canapés are small snacks served on bread/crackers, with various toppings, for guests to nibble on, basically while waiting. Also served at cocktail parties ya? Of all the nibbles she like to prepare, this is undeniably the most unique. Full flavoursome canapé she has ever made, breaking from the traditional cracker-type canapés.
If you adore bacon, she urges you to try this. All the flavor and richness of savory meat but in a light as air and gently sweetened mixture. With complimenting flavors to make you reach for another, washing it down with whatever drink you happen to have in hand. Ridiculously pretty easy recipe here.
She used pancetta bacon and smoked salmon, and of course the Organic Longan Honey by MEKHALA. Pancetta, most known as Italian bacon is salt cured but is not smoked like American bacon so it is moister and has a mellower flavor. Only the belly of the pig is used for Pancetta. She chose smoked salmon to give it a draconian kick since she would use the Honey to bind the two contrasting flavors.
Here is wickeRmoss DIY canapé recipe:
SALMONCETTA ala MEKHALA
150g Smoked Salmon,diced
6 slices of Pancetta Bacon, diced
1 Tablespoon pickles
1/4 cup mayonnaise
1 Tablespoon extra virgin olive oil
1 spoonful of Organic Longan Honey (MEKHALA)
salt & pepper to taste
Bed of Greens
Onions, cut into rounds (use white onions if you prefer yours more on the sweet side)
Grilled Portobello Mushrooms(optional)

- Heat oil in a non-stick frying pan/teflon pan over medium heat. Cook salmon & pancetta bacon for 5-8 minutes . Season with salt & pepper.

Drain excess oil using a paper towel , then set aside to cool for at least 2-3 minutes.

- Simultaneously add the mayonnaise & pickles into the meat mixture. Do not mix yet.
- Drizzle the mixture with 1 spoonful of Organic Longan Honey (MEKHALA); "A spoonful" means heaped or rounded, with as much above the bowl of the spoon as in the spoon
- (Optional: Sprinkle more pepper to taste)
|1 Spoonful is enough to cover/coat the entire mixture!|
- Using a wooden spoon & fork, gently stir the mixture until thoroughly coated with the honey.
- Plate on a bed of greens & garlic bread, adding a thinly diced cheese on top.
Preparation time: 8mins
Cooking time: 15mins
